Extensions are all the things that you can add to the default joomla.

This extensions can be:
Components: Is a new functionality, with its pages and all (example: a forum, a photo gallery)
Modules: Is a part of a page (ie: login box, search box)
Plugins: They do things with certaing triggers (ie: search your database)

Hope it helps!

Well, I would say it differently, though the previous poster is correct.

Extensions is a general term for the 3 types of 'extras' - modules, components and plugins.
Plugins are active all the time (or triggered as the previous poster said), and generally perform some function when triggered (usually by a tag included in articles).
Modules add extra functions which can be placed directly on the output screen using a 'screen position' identifier.
Components add new functionality and may include plugins and modules.
Example
A plugin might search articles for all occurrences of a label such as <video> and trigger a video player when it finds them.
A module might BE that video player.
A component might be a complete video management system that includes the previously mentioned plugin and module
