Am on a little holiday in Oman - cheapest and easiest escape from the UAE. Had hammour fish curry for lunch, what a treat that turned out to be, particularly when a person was ravenously hungry at the same time. This chef did an amazing job of it. Not a heavy sauce. Just a subtle blend of Indian spices, and the fish just about melted in the mouth. Guess that's the difference between freshly caught fish here on the Coast of Oman, and the ones that take a while to make their way to the UAE.
Just Googled it, here's the recipe probably that this chef followed (without the thick coconut milk) as the best part of it for me was there was no thick in the curry sauce:
