So tonight I felt quite hungry, and hadn't taken anything out of the freezer for dins. Then remembered the fresh mushrooms I'd purchased in the morning, and that may go well with red pacific salmon (out of a tin) and coconut milk (also out of a tin). Did the basics first, chopped a medium sized spanish onion, grated about two inches of ginger, pressed four garlic cloves, fried that in coconut oil in a casserole dish and added a liberal dash of Nando's Peri Peri sauce. Then added about third cup of coconut milk - the nice creamy part, and plenty of vegetable broth, whilst scooping in the chopped mushrooms bit by bit ending in almost the consistency of a fragrant soup. Right towards the end I opened the tin of red pacific salmon, and forked that into the mixture. GREAT taste! Plus some spare for the freezer - just the way I like it.
