OK, this was a lucky one. One of those quick cooking sessions that resulted in the perfect stew.
Off late I've developed a liking for spinach, which is imported from the United States under the "Ready" brand. It's expensive, but zero waste. Comes pre-washed, so just the right thing for a lazy guy like me. I usually use this spinach for salads, but when it gets close to expiry, i.e. looks as though it's going to get soggy, I cook it, and tonight I used about two thirds of a bag in the perfect stew.
I fried up some grated ginger, chopped onion and crushed garlic in coconut oil. Then added a cup of canned crushed tomato as well as some organic minced grass fed beef. Used a fork to mix all of it together. Then folded chopped spinach one plate at a time into the cooking mince. Then added some curry spice and a new secret ingredient I purchased on Sunday, Nando's Medium Peri-Peri Sauce. Final secret ingredient was a table spoon of apricot jam. Darn, this turned into a great dish.

Right! Haha .... I like watching cooking shows. So tonight caught one half way through, a Thai spinach dish. All of the steps looked completely familiar to me.
