Tinned salmon curry

Earlier this week, one morning at 5:00 a.m. I was ravenously hungry and not sure what to eat. So this dish just happened spontaneously. I fried up chopped onion, grated ginger and plenty of fresh pressed garlic in a little bit of coconut oil. Then noticed a tin of coconut milk and added half of it to the onion mixture. Then added plenty of curry spice, a bit of vinegar and apricot jam, allowing all of it to mix together. Then finally a tin of Alaska salmon. All of it turned into a fish stew. Went down fantastic and kept me tanked up for about 24 hours. Guess that's about the closest I've come to breakfast in a long LONG while.

I might give that a shot. I probably won't use that my curry but it might still have some heat to it. Tonight it chili night for me, though.

Haha ... I LOVE chili. I should really try and make that as well. Looks like hard work however? And I'm VERY lazy cooking wise.

It was sort of from a book. I got the basic idea and then threw stuff together. Tasted good. Lost of veggies and it was hot! Well... Hot for me. I think I started making it at 4pm and had to wait for everything to heat up (put everything in my crockpot). Had my first steaming bowl by 7:30pm. It could have been ready faster if it was in a pot on the stove but I didn't want to risk burning anything. Now I have quite a bit left over so I'll have to stow it in a container and that will be lunch and dinner for a few days. I should try my leg of lamb recipe again. That one involves a bottle of red wine! Razz

Bottle of red wine sounds great! I'm too patient to wait for food to cook that long. Probably should give it a try one day. Razz

Yea I was waiting a few hours... it was supposed to be a 5lb leg of lamb and the closest I got was probably 3 or 3.5lbs and it was expensive! The recipe was from Hello Canada! and it was by Pippa Middleton. I think it was meant for a large group but I'd make it for myself and enjoy the left overs!

I should check out Hello Canada. Lamb sounds awesome. Haven't had any in AGES!

This recipe looks interesting. Got all my regular ingredients in it except the chili and the beans. I like the comment at the bottom of the recipe about browning the meat and adding red wine.
