I rather like the taste of yams, particularly since it is a yellow vegetable and it's supposed to be good for a person, or so they say. It's probably one of the most filling vegetables, and very delicious.
I have various ways of preparing it, the easiest is to just wrap it in tinfoil and bake in in the oven for about two hours. However tried something different two nights ago, and it was a great hit.
I first skinned a large yam and cut it into medium sized chunks, about an inch or more in diameter. I then chopped about two inches of leeks, and grated about an inch and a half of ginger over the leeks. Fried the leeks and ginger in a small spoon of coconut oil in a medium sized casserole dish on a gas stove, until the mixture was transparent. Then added the cut yam, mixed it thoroughly with the leeks and ginger. Then added about two cups of chicken broth to it. Let it boil, covered, at low heat until it was ready. I added a little sea salt to it. Worked out really great. Could be that the ginger and onion give the yam a more balanced taste, as it tastes much more satisfying than baked. I also needed less, so was able to freeze some of it for a next meal.
