So we had our departmental potluck this afternoon. I signed myself up early enough for a main dish of pasta. I only did that after I'd found something I could make and easily bring in and warm up. I was actually at our computer bench working away when I looked up and saw we had a calendar, that with a recipe for each month. I took it down and scanned through the months until I found it. The margherita penne!
Obviously if you read one of my previous posts - the grocery store awkwardness - I was trying to get the ingredients together. Last night I put this together and got the noodles ready and I started on what turned out to be the sauce. Keep in mind I've never made many things from scratch and pasta sauce is one of those things.
I didn't follow the recipe exactly. I mean, it was 2 tablespoons of butter but I kind of eye-balled a chunk and tossed it in. The thyme I measure properly. Same with the flower and milk. I think I added more of the pepper flakes and the cheese! I think I also added more tomatoes than the recipe called for. Ok so maybe I didn't go wild! I also added a bit more garlic...
Anyway, I always fumble when they talk about stirring or whisking something until it's smooth and thickened. I did my best and it smelled amazing! I got the pasta back and poured the sauce on top and did my best to mix it up. I didn't add the basil... I actually forgot about it entirely after I'd transferred the pasta to my crockpot.
By the morning I'd arranged to get a ride in with a co-worker and I had my cheese grater and more cheese and I brought along some fresh basil. Heating it up again was a nightmare. I was out doing some classroom sweeps and I had no idea how long it would take to warm this stuff up... apparently a long time!! I ended up throwing it in the microwave and nuking it for several minutes and making sure it didn't burn. I got it out there and I saw it on a few plates. I think folks liked it. I sure did. I think it would be best served fresh though... so I have one meal idea if I have company over

I had a moment when I was reading the instructions that said "in one pot boil water for pasta" and sometime later "in another big pot..." I looked at my co-worker and basically yelled "I'M ONE PERSON IN A LITTLE APARTMENT!!! HOW MANY BIG POTS DO THEY THINK I HAVE!?!?"
