I made my first supper last night at my apartment. It wasn't anything fancy, just some roasted potatoes with season salt and minced garlic on top, and some quick fry beef (i'm a little impatient). I also made a salad that was too big, took up over half the plate and it took me forever to finish it.
The potatoes tasted great. I've really perfected that aspect of my meal. The beef was just beef. I didn't have anything to put on it like a sauce or some mix of spices. The salad has a sun dried tomato dressing drizzled on top and it was definitely a great salad.
I'm not sure if I'll make something tonight or not since I'm not done work until 9 pm. I put some chicken in the fridge before I left for work but I'm not sure how I'll make that (oven or stove top). I'm seriously a meat and potato person, it's how I was raised. Then there's the random night where we would have pasta and I went from slapping on a slice or cheese as a kid to pouring on the sauce and Parmesan cheese. I don't eat pasta as much anymore, I find I fill up way too fast and run out of gas too soon; not enough protein I guess.
I have a pretty good variety of meat right now. I found out one of the grocery stores was open until 10 pm and my bus practically goes right past it. I stopped there and picked up some pork, beef, chicken thighs and tilapia fillets. I bought a bunch of other stuff like cheerios, chicken strips and plum sauce, and some other stuff I can't seem to remember... I portioned off the meat and wrapped them up and stuffed the meat in their respective Ziploc freezer bags and tossed them in the freezer. My mom taught me that trick so I can just pull out one portion and the rest will be well preserved.
I may make tonight a chicken finger night... I haven't had those in a while and I don't want to be up too late. I usually crash around 10:30 or 11 pm and I wake up somewhere between 6 am and 7:30 am. I just can't sleep in anymore and it's been about two months... The cycle has kind of reset due to recent events. I don't think I mind too much since it feels like I have even more time to relax before work. I might try and squeeze in some yoga as those classes seem to run primarily in the morning at my gym.

Sounds like your first meal was a great one. Pasta has the same effect on me too. What do you fry your beef in?
