I like the Japanese songs of Yu Yu Hakusho. 
However, my favourite song I heard in an anime was the Brazilian version for the ending track of Tenchi Muyo. The lyrics are joyfull and lovely.

I love the ones from Bleach series. Also like all the soundtracks from BECK anime. I have it on my car radio all the time and it is a fantastic soundtrack which i recommend (along with the anime) to everyone I know that likes anime.

I agree with carlokes, theme songs of Bleach are really good especially Life is Like a Boat. I really love it. Also other songs from Fruits Basket, Ouran High School Host Club and Cardcaptor Sakura

Full Metal Alchemist's OP, the movie's OP and ED, Gundam 00's OP theme (ad also the ED at the last episode of 1st season).

Beck soundtrack is just great, too bad the anime is not that good (I mean when they "do" the concert)
The other that I love is, Clannad ending theme. Dango Daikazoku... Addicting, I ever heard this song for more than 6 hours straight ^_^;;

Lucky Star has a catchy catchy song. And I have a remixed version of it that is also good. IMO Lucky Star is the Seinfeld of anime. It has no plot and is just a few friends who sit around and talk while going about their daily routine. But somehow its interesting.
Oh and Love Hina's used to be catchy but then I listened to it so much that I can no longer listen to it ever again lol.

Hehe. Today I recorded myself singing it for my girlfriend
.Black Cat's "Daia no Hana." I also really like "Bokura no Bouken" by Kids Alive from Hikaru no Go. ^^~ 2nd Stage by that group is awesome, too.
The opening theme for the English dub of Robotech: The Macross Saga holds a special place in my mind. Ah, nostalgia.
The first opening for Shakugan no Shana Season II, or perhaps the opening of Fate/Stay Night. Both were pretty good to me.

I like the Naruto theme songs, haha . Mostly they are kind of silly but they always have a catchy tune.. now I haven't watched Naruto anime in a long time so I don't know about the music atm, but it used to be good
