When I choose to watch a topic, where do i find all of the topics I am watching?

I don't think there is a place where you can see that. You'll get an email if someone replies and you'll see "unsubscribe" instead of "subscribe" underneath the topic but I think that's all.
You are supposed to get emails everytime there's an unread post in any topic that you're watching, that's all. Unlike vB, there is no facility to view your "subscribed" threads.
