Dietary Fats - How much and what sort?

There was recently a Scientific American Reports issue that dealt with many aspects of the ideal diet. In it, they looked at the most recent US food pyramid and rebuilt it according to current research.

Their bottom pyramid layer (above exercise) included fats. What I couldn't find was:

1. How much (in tbsps, say) is ideal per day?

2. Does cooking with good oils reduce their dietary value?

3. If so, what are other good things to eat good oils with?
