i went to my grandads funeral yesterday, and the vicar seemed to go on more about how much god loved earth and jesus his only son, and the good that god did through my grandad. seemed wierd.

I personally find it ridiculous when talking about someone who has died, in terms of "God's love"... it's just like, what would God have to do with my grandpa?
That's generally what funerals are, because people want the hope that their loved one is saved, and in a better place. It's a pleasant thought, and I hope that the funeral went well.
As for why God had one Son - well, that's a question you'll have to ask God after you die.
God says in the Quran that
He will ask Prophet Jesus (mercy and peace of God be upon him) on the Day of Judgment:
O Jesus, son of Mary! Did you tell people: Take me and my mother as gods besides Allah? Then he will say: Glory to you, I could never say what I had no right to say. If I had said it, You would have known it, You know what is within myself, but I do not know what is within Yourself. Verily, You alone are the Knower of the unseen. I did not say to them except what You commanded me; to worship Allah, my Lord and your Lord, and I was a witness over them as long as I was among them, but when You raised me up, You were the observer over them, and You are the witness over all things. (5:116 - 117)

I liked the way he says it, such a nice way.. I just liked it. (even though I got nothing to do with it)
I also recently attended a funeral --
I was really struck with how barbaric we really treat our dead -- if you think about it, how much chemicals we pump in there - and how much previously vital internal parts removed... We make the body hardly usable by the worms - is that strange?
I would like to be cremated - burn me to a crisp, I won't care - I'll be dead, right?
I remember seeing something in a documentary about Buddhist monks - and how they simply take their dead to the top of a rocky mountain and give the dead directly to the vultures.
What do Arabs do with their dead? Do they fill will formaldehyde?
Thats one of the thing I don't like about some Christians (marked, not all ^^)..
They even planning for a session to convert people to Christian during my uncle's funeral 
at my grandad funeral, i didnt pray, and i didnt sing the hymns, in return, i dont know if he did it on purpose, but i was the only purpose he didnt say god bless to at the end. (which i liked).
but the point was my grandad had a 5 minute slot about him, the rest of the 30 mins, was praying to god, singing to god, vicar telling us everything my grandad did was god working through him. that god loved jesus, that god loves earth so much he gave us jesus.

Mind this is not allowed in all religions.

I have heard this whole sermon many times before (before I converted from Catholicism to Atheism) - how God had a human son - and killed him so that he could understand humans better. I like a God that would be omniscient - in the case of knowing humans, this God needed an example I guess. So, Jesus died (and became a God himself) - and your grandfather hopes to join them all in this so called heaven.
I don't want to disrespect your grandfather at all - it seems disingenuous to me that they'd take this opportunity to try to recruit more into their faith. If I was running the show, I would have had a complete homily about your grandfather.... he's the one who died after all -- we've all heard the biblical death stories many times -- "I am here for Grandpa".
You can't really change some aspects of the services for some sacraments. I know that weddings can be touchy - that's why the Mayor had to marry me and my wife (but he still said God several times - even after we told him that we were Atheist and didn't want to have any mentions of God or Holy, etc).
