i've heard that on the olyimpic games of beijing 2008 the food given to the athletes will be tested by rats previously in order to detect any kind of poison on them. don't you find it ridiculus?

Yes, I've heard that also. It's little bit weird, yes, and I didn't understand how they gonna do that tests.
I thought this was to test for counter-doping, or sabotage of a meal by including performance-enhancing drugs...? There is increasing concern that, because of doping scandals in previous Olympic games, a rival group may try to drug another team so that they're caught during the drug tests and disqualified. In which case, the rats would be useful; they're small and they have a very human-like metabolism, albeit much faster, so if a rat ingests a drug like steriods, they'll display effects quickly. I imaging blood or urine tests on a rat would be easy to perform on site, before dinner.
