what colors work best together on a site, ie the normal white backround and black text, im just trying to add some spark to the site without making it to hard to read

It's about the images that make up the site, so that the colours you use will be as a motif taht you use throughout.
chose a few colours that work well together, and use those colours for font, links and such. Links usually are different coloured than the text.

stay away from super bright colours... like most lame freewebs pages with dodgy backgrounds and unreadable text...

As long as the colours themselves don't blind the user, every colour will work with another, assuming it goes with the graphics and layout. A common route is using varied shades of the same colour to show definition. Going with all reds, or a sepia scheme is a nice choice. However, remember than when using different colours together, that the differences aren't too huge...unless that's part of the colour use...argh, I'm rambling.
Simply put: use anything, as long as it's easy on the eyes. I mean, red background, with a bright yellow content area is gaudy, but you could make it work with the right shades. Let's say you have a Metroid website...then red and yellow would be perfect, see?

http://www.colormatch.dk/ is a very very good site its a javascript and is only 5kb(!) also for more advanced types of colormatch simply google colormatch then you will get some more advanced and better types.
colormatch gives you 5 matching colors to the color you pick and it works well.
but otherwise id recommed a white background because the text will be easier to read and the site feels more clean but its up to your taste and what you think looks good but keep it clean dont use too many colors

When selecting your colors remember that you have people out there that may be looking at your site and they have problems with low contrasting colors and some have coloor blindness such as red freen color blindness and will have trouble seeing or reading things that are not contrasted properly.

dont forget to always use some contrary colors to your backgrounds and letters..
avoid using the complementery colours, of course.. that will making user become getting headache
