MIne is hummm thats hard I dnt know there are so many good ones... I think its is close between 3 A) Passion of the Jew, B) I cant remember the name but in it says "your not to jewish to warship jesus are you?"" well i guess not" and C) the LOTR one with the porn. I am sure there are many more that I could add to this list but this is just what comes to mind.
Oh, there are so many great ones, and what an appropriate topic this is with the 10 South Park Episodes That Changed The World going on. But the one episode that always comes to mind is the much talked about Scott Tenneman episode, where Cartman makes him- you know what, I won't spoil it for anyone that hasn't seen this episode.. It really defined how far they'll go for a great laugh. I did not see that ending coming. If you haven't seen this one, then look for it, wait for it to come on, whatever, you'll love this episode.

God, there are just so many good ones..."Jewbilee," with Moses as the Tron head was great. As an asian-american, I found the asian announcers in the dodgeball episode ("Conjoined Fetus Lady?") to be absolutely hilarious. I also liked Chinpokomon, The Biggest Douchebag in the Entire Universe, and Tsst.
