IM client- GAIM
i dont use DC++. i use aMule, much faster... anywayz, the official DC++ is better but installing is a headache...
Music Player- amaroK and VLC media player are the best. i use VLC as it plays all the formats. havent used much of amaroK but heard it's great from reviews.
VLC is also the best video player i have seen for Linux...
i dont know about IRC but i think one is bundled with Ubuntu. alternatively, u can also use the IRC client that ships with aMule.
what is BSplayer???
desertwind
Video Player: Xine/Mplayer
IRC: xirc
test32rota
My 5 cents: DC++/emule/Bittorrent - mldonkey (all-in-one)
sush
Aww what's wrong with Rhythmbox Embarassed I used to use it with my ubuntu box and worked perfectly fine. Suits the uniform GTK theme.

Video player?
GNU/Linux has the best video players : mplayer, xine, VLC, and many frontends to them (for instance gxine...)

As good I don't know, but better : Xchat.
And irssi if you want the most powerful client, but text-based.
