I have found a few songs of theirs that were good, I only purchased their Once album. Anyone got suggestions on another good album of theirs?

Get the album "Century Child". Absolute killer album.

It's a shame they let go of Tarja Turunen, they female front vox. They wont be the same without her, I can tell you that much. Classically trained, professional, female vocal into metal? That's a rarity, if not a unique person.
