Can I set up multiple domains on Server 2 that redirect to each other and have e-mail addresses from them?

EXAMPLE

Set up 2 domains: example1.com & example2.com
Set up 2 e-mail accounts: example@example1.com & example@example2.com

Can I have different e-mail addresses going through different domains from the same DA account?

You have to set them up as different domains and then issue a redirect. Then it will be possible to have different email addresses.
