There are a lot of tutorials and e-books on internet. You can choose to learn according to your need. There is no much difference for windows java and unix java, because it is OS independent. Generaly speaking, java can be used to develop application program and java applet. Really do not know what is your most wanted.
Besides using google, you can directly visit SUN website, there are enough stuff for learning and using.
