Wondering if anyone else reads these books... I've read the 3 book series War of the Ancients, and it was great, but does anyone know if any the books focus on Arthas' story?

Yes. The first thing that came to mind was the Doom and Diablo books that were, for lack of a better way to phrase it, TERRIBLE.
