cats hate water yet evolved to love fish?

Most species of cats hate water, yet love fish or at least fish juice. (Our cat often leaves tuna meat behind.) Is there an evolutionary explanation for this? Or was God playing a cosmic joke?

It's fairly simple, really: fish is a high quality food source, but it's not one cats are (generally) evolved to attain. That's not to say they can't opportunistically take advantage of the food when they come across it.

Many wild cats are far less averse to getting wet than domestic cats, however... I assume you're basing your questioning on domestic cat behaviour, and not that of wild species? There are wild species that enjoy getting in the water and will readily do so; bengal tigers, for example, are ready and active swimmers... they're a bit large to hunt fish generally, however. Many domestic dogs also often love to get in the water... but I'm pretty sure wild species are no more likely to pop in for a fun swim than any other terrestrial mammal.
