I never really thought you can play games by email. Do the just show you the last move that was made and then you make a move and email it back to them?

Yes, approximately so, it is not dependent on types of games. The list of commands (refers to as the order more often) is sent a computer (server) or the Game Master (GM), answers from all players, then reports are made and dispatched all participants.

It depends on much. Sometimes can be once a week, can be more often or less often. I am GM, and in mine game (is not a chess), per one week five turns.

You could play civilization this way. I think if you want to make a long-time taking turn based multiplayer mode, you'd be better off using a small xml file on a central server.
